another cooling question

my stang recently developed an over heating prob. I have a 69 mach 351W 4V, 4 core rad, 180 deg therm. It runs decent for a while then after being in traffic for sometime i can watch the temp gauge climb till it over boils...Now i did play with the carb because i thought it was running to rich...i may have "leaned" it out to much...how do i correctly adjust the carb. I have a Holly 600. part 2 of my question is when the therm is open and fluid is running at idle how should the fluid look while its running past the opening in the radiator?.....should i see "white caps" or just a steady fluid moving. I guess im trying to figure if i have a blockage.....i have a new radiator and therm just in case but i want to isolate the prob before i rip all that out...

Leaning it out will definitely create more heat. To richen up a Holley you
need to increase the jet sizes in both the primary and secondary. Go up one size
in jetting and see if that resolves the problem. BTW...what made you think it
was running rich?

What on the carb did you adjust.? From what you are saying the overheating
is basically idling in heavy traffic. An overly lean idle mixture might be
the cause. If you leaned up the idle screws try resetting them back out 1/2
a turn. It may be that the motor was on the edge of overheating and a small
change tipped it over the edge....

The second answer is - (fully warmed) steady fluid movement. No
bubbles, foaming or 'white caps' are normally apparent at idle.
