Tire/wheel combo, suspension and gauge questions

I finally purchased my first Mustang, a 64 1/2 coupe. I have PS,
AC and a 68 302 2v and C4. The electrical was converted from generator
to alternator before the purchase. I've replaced the single exhaust
with duals and stock mufflers. I've rebuilt the front and rear
suspensions to standard specs along with all new brakes and a pair of
new floor pans. The interior has just been freshened with a pair of 69
buckets (I needed the headrests), new covers, carpets, dash and door
panels.
I'm looking for a good tire/wheel combination to upgrade my 205R70-14
set. I'd like either 225R60-14 or 15 on the correct style steel wheels,
but noticed a 65 convertible with a set of 95 GT wheels that looked
great! With the stock suspension, do I have very many options? Will
the 225R60-14's fit? Are there offset options on the style steel
wheels? Would lowering the front with new coils (620's have been
recommended) cause problems or help? This is a daily driver and I don't
want the the ride to be stiff, I just want better handling. With my
stock parts the best ride is when I've got a full tank or when I my kids
are in the rear seats. I haven't driven any other pony to determine if
what I feel is 'normal'.
Also, to change out the dash from lights to gauges, which sender units
do I need to swap?

Haneline has a nice setup for gauges. I have 225/50 16's on my '66 and
they fit and look great. The rims are Torque Thrust D style Hallibrands
(if you've ever seen the BF Goodrich ads with a lime green fastback it's
the exact same setup). I would be leery of the '95 rims since I don't
know their offset...

I run the Vintage 45 16X8 4 1/2" backspace/ 255/50ZR16 Comp TAs on my 69
Torino but this tire is too big for '66 Mustang. I agree that 225/50/16 is
good combo but I sure would like to see what 245/45ZR16s looked like on a
'66 (white tire smoke??) LOL

Torino but this tire is too big for '66 Mustang. I agree that 225/50/16 is
