My car (originally a 3-speed manual) has a 2.79 rear axle and I'm running 225/60/15 tires. Is there a "simple" way to figure out what tooth count I need on my speedo cable with a T-5 tranny?

Just finished that exact same swap just a couple weeks ago!!
You're combination is the same as mine, so I've already done all the
calculations you need. (Actually Bruce @ ModernDriveline.com did all the
calculating.)
For your particular combination, you need a T5 drive gear with 8 teeth and a
driven gear with 18 teeth. That'll get you about as close as you can get for
those tires and rear-end.

I just checked the driven gear on the end of my 3 speed manual speedo cable and, to my surprise, counted 18 teeth. So, I figured I would give it a try (manually) and it seems to turn just fine when I spin the shaft of the tranny. So, I guess I'm good-to-go.
