[Oil pressure on '66 coupe

Thus far, IHMO, no one has properly answered this, so here goes...
First of all, the "almost pegged" reading is not at *all* normal (common,
but not normal) -- what you're seeing is the telltale symptom of a worn-out
sender. Any decent Mustang parts vendor (and most auto parts stores) will
gladly sell you a replacement which should return your gauge to roughly the
center of the scale. (If *all* gauges are reading high, replace the
instrument voltage regulator first.)
Your much lower reading at idle, though, may indicate:
a) Your oil is desperately in need of changing (bad, but easily correctable).
b) Reduced alternator output (though *all* gauges should drop
simultaneously in this case).
c) A partially clogged filter screen on your oil pump pickup (also bad,
also fixable, but don't wait).
d) Engine wear. (Hopefully this can be ruled out by your recent rebuild.)
Start with changing the sender and changing the oil if necessary -- if that
doesn't correct the problem, move on to other possible causes...
