I could use some help. I recently bought a '66 mustang. I have been trying
to locate all the tune-up spec, but can't seem to locate info. Can anyone help?

Honestly, I bought a service manual for that year and it is worth it... Covers every configuration for that year, and if you need to pull something awkward apart - the manual has directions so you don't pull apart the wrong thing.
Worthwhile investment.

For the 1966 289 2V:
For the carbs, you don't say what you have, so for idle:
Autolite 2100: 550-650, depending on model
Autolite 2100D: 575-800, depending on model
Motorcraft 2100: 650-700, depending on model
Get me the specific model, I'll give you the idle. I have a 2100 and
keep mine at about 700, it works well there.
Plug: BF-42
Gap: .034 (.86 mm)
point gap: .017 (.43 mm)
dwell: 29 degrees
initial static timing: 6 degrees BTDC for both manual & auto tranny
At my altitude, I advance my timing a lot, to about 16-18 degrees BTDC.
Anything else?
